Shiitake (Lentinula edodes) has been cultivated in Asia for over 3000 years. Farmers
in China developed the early cultivation methods and taught them to Japanese farmers
over 300 years ago who dramatically improved the growing techniques and now lead
the world in Shiitake production.
Many Asian cultures believe that Shiitake is an elixir of life and recent studies have shown that eating Shiitake mushrooms lowers blood serum cholesterol in humans and inhibits cancer formation in mice.
Log grown Shiitakes (NOT sawdust grown) provide high levels of protein (18% by mass), potassium, niacin and B vitamins, calcium, magnesium and phosphorus. The Shiitake mushroom also contains all eight essential amino acids and according to the American Cancer Society, is known to fight the development & progression of cancer & AIDS by boosting the bodies immune system.
