 Shiitake (Lentinula edodes) has been cultivated in Asia for over 3000 years.  Farmers in China developed the early cultivation methods and taught them to Japanese farmers over 300 years ago who dramatically improved the growing techniques and now lead the world in Shiitake production. Many Asians believe Shiitake is an elixir of life and recent studies have shown that eating Shiitake mushrooms lowers blood serum cholesterol in humans and inhibits cancer formation in mice.

  With the known health benefits and delicious flavor of the shiitake mushroom we would like to see a log in everybody’s kitchen or backyard!  Shiitake mushrooms have a wonderful texture unlike any other mushroom and go with just about any meat or vegetable; they can even be eaten right off the logs!

 Log grown Shiitakes (NOT sawdust grown) provide high levels of protein (18% by mass), potassium, niacin and B vitamins, calcium, magnesium and phosphorus. The Shiitake mushroom also contains all eight essential amino acids and according to the American Cancer Society, is known to fight the development & progression of cancer & AIDS by boosting the bodies immune system.
